House-Made Mortadella

Our mortadella is made in-house: finely emulsified pork studded with cubes of blanched back fat and whole black peppercorns, seasoned with garlic, white pepper, nutmeg, mace and coriander, then slow-cooked until silky.

Slice it paper-thin for sandwiches and boards, or cut it thick and sear it in a hot pan.

Ingredients: Pork, pork fat, salt, garlic, spices (white pepper, black peppercorns, nutmeg, mace, coriander), sodium nitrite.
