A good rule of thumb is about one pound of bone-in roast per person if you want leftovers, a little less if you do not. For a table of 6 to 8, a 6lb roast is the sweet spot; for a bigger holiday crowd, size up to 8 to 10lb rather than buying two smaller roasts.Pull it from the fridge an hour before it goes in the oven, and give it at least 20 minutes to rest before carving so the juices redistribute instead of running out onto the board.
