The Private Cut

Extremely limited. Four seats, twice a month.

The Private Cut is a hands-on session at the block with one of our butchers — under two hours, start to finish, on a Prime-grade striploin and a whole bird. You'll trim silverskin and fat cap and portion your own steaks, break down a whole chicken into eight clean pieces, and finish with one of those steaks seared and plated for you on the spot. Everything you cut goes home vacuum-sealed and labeled.
