Canadian Prime Striploin
Our Canadian Prime Striploin comes from the small share of Canadian cattle that grade Prime, the top Canadian grade. It carries the firm bite and clean, direct beef flavour the striploin is known for, with the extra marbling that earns it a place in our top case.
Every steak is hand-cut to order from the whole loin, so you choose the thickness rather than taking whatever was portioned days ago.

How to cook it: Salt it ahead and let it come to room temperature. Grill or pan sear over high heat, roughly four minutes a side for a one inch cut, then rest for eight minutes and slice against the grain.
