How to Reheat It
- Thaw in the refrigerator if frozen — never at room temperature.
- Preheat oven to 190°C/375°F.
- Place the Wellington on a baking tray, uncovered — do not cover or microwave. Trapped steam will make the pastry soggy.
- Reheat for about 15–20 minutes, until the pastry is golden and the center is warmed to your preferred doneness.
Safe Reheating Temperature
| Doneness | Internal Temp |
|---|---|
| Medium-rare (typical serving temp) | 52–54°C / 125–130°F |
| Health Canada minimum for whole cuts of beef | 63°C / 145°F |
Beef Wellington is built on a whole-muscle Prime filet, so — like our other whole-muscle beef guides — the choice of doneness is yours. It's typically served medium-rare, around 52–54°C/125–130°F at the center. Health Canada's minimum safe internal temperature for whole cuts of beef is 63°C/145°F; reheat to whichever point along that range suits your comfort level, checked with a digital thermometer. Only reheat once.
Chef's Tip
Insert your thermometer from one end of the Wellington, running it lengthwise toward the center, so you don't pierce the visible pastry on top.
