How to Cook It

Oven Roasting

  1. Remove from the fridge 30–40 minutes before cooking; pat dry inside and out.
  2. Season generously, including the cavity, and truss the legs.
  3. Roast at 200°C/400°F, breast-side up, basting occasionally.
  4. Cook until the thickest part of the thigh reaches 82°C/180°F and juices run clear.
  5. Rest 15–20 minutes before carving.

Safe Internal Temperature

Cut Internal Temp

Always check with a digital meat thermometer — colour alone isn't a reliable doneness test. (Source: Health Canada safe cooking temperature guidelines.)

Chef's Tip

Basting every 20 minutes keeps the skin golden and the breast meat moist.
