Itsumo Tuna — Cooking Guide

About This Product

Itsumo is a world leader in Sashimi Ahi tuna production, with facilities in Japan, Thailand, and the Southern Philippines. Their chemical-free shelf-life extension and pathogen elimination technology yields Japanese A-grade Ahi tuna, prized for its consistency, colour, and quality.

How to Cook It

  1. Pat the tuna loin dry with paper towel.
  2. Season simply — salt and cracked pepper, or a light sesame oil and soy marinade for a few minutes.
  3. Get a pan or grill screaming hot, then sear the loin for about 30–45 seconds per side, on all sides, until a deep, golden-brown crust forms.
  4. Remove immediately — the center should stay raw/rare.
  5. Slice thin against the grain right before serving.

Food Safety Note

This is sashimi-grade Ahi tuna — it's safe to eat rare or raw at the center, so there's no target "cook to" temperature. Simply keep it refrigerated until you're ready to sear, and slice with clean equipment.

Chef's Tip

Use a very sharp knife for slicing — a clean cut preserves the texture of the seared crust and raw center. Serve with soy sauce and wasabi.
