Linton Pasture Pork Rib Chops — Cooking Guide

About This Product

Our Linton Pasture Pork Rib Chops are a premium heritage pork cut prized for its rich marbling, tenderness, and deep pork flavour — bone-in chops cut from the most tender section of the pork loin.

How to Cook It

  1. Remove from the fridge 30–40 minutes before cooking; pat dry and season.
  2. Sear in a hot, oiled pan or on the grill 3–4 minutes per side until well browned.
  3. Finish in a 180°C/350°F oven if the cut is thick, checking with a meat thermometer.
  4. Rest 5–10 minutes before slicing.

Safe Internal Temperature

Chef's Tip

A brief brine or dry rub 30 minutes ahead makes a noticeable difference on leaner pork cuts.
