How to Cook It

Salt generously and rest at room temperature for 45 minutes.

Sear over high heat, tilting to render the bone side evenly, about 4–5 minutes per side.

Rest 10 minutes, then carve the strip and filet off the bone to slice.
Two classic steaks, one bone — cook to the thinner filet side.
