How to Cook It

Salt generously and rest at room temperature for 45 minutes.

Reverse sear: oven at 250°F until 120°F internal, then finish in a screaming-hot cast iron.

Baste with butter, thyme, and garlic, then rest 10 minutes before slicing off the bone.
