How to Cook It

Salt generously and rest at room temperature for 45 minutes.

Reverse sear: oven at 250°F to 115°F internal, then finish over high heat on both sides of the bone.

Rest 10 minutes, then carve the strip and filet off the bone to slice.

Two steaks in one — cook to the tenderloin side, then let the strip catch up.
